‘Tis the season for holiday party after holiday party after holiday party. Homemade eggnog is a special treat that I like to bring along to share with friends. It’s a little unexpected and everyone loves to have a taste even if it’s just a sip. Eggnog is an indulgence that’s for sure…but just watch, not many will resist.
Ingredients:
- 4 Eggs
- 1/4 Cup Pure Maple Syrup
- 1/2 tsp Vanilla Extract
- 1 Quart Whole Milk – with cream on top if you can find it
- Fresh Nutmeg
- Bourbon – Optional
Directions:
Separate the egg yolks and whites. Beat the yolks with the maple syrup and vanilla. I use a darker maple syrup because I think it has more flavor, so look for Dark Amber or a Grade B.
Beat the milk into the egg yolk mixture. I’m using Ronnybrook Creamline Milk which has cream on top…that’s the cream in the photo above, mmmm. If you can find milk with cream on top, use that. It will add some richness.
In a separate bowl, beat the egg whites until frothy and pour them into the bowl with the milk. Beat to incorporate.
At this point you can either grate some fresh nutmeg into the batch or wait and allow guests to grate the nutmeg into their glass themselves…because there is nothing quite as lovely as the smell of freshly ground nutmeg.
If you like your eggnog with a little kick, try adding some bourbon. Tuthilltown's Hudson Baby Bourbon is made from 100% New York corn.

My son and I made the eggnog using fresh milk purchased straight from a dairy farm and pastured eggs from our local farmer's market. He loves eggnog, but I had never tried it. I am very surprised how good it is and actually how nutritious it is, now that I understand the benefits of the best quality eggs and milk. I also liked the fact your recipe uses maple syrup instead of regular sugar. One question. He likes his eggnog thicker. What would you recommend to make it a little thicker.
ReplyDeleteI'm so glad that you enjoy the eggnog. If you would like it a bit thicker, you could use cream instead of milk.
ReplyDeleteHow long does it keep? I am planning to make this a a present, so can it be kept in a bottle in the fridge for a few days?
